True canelés are enjoyed with a caramelized coat and a very soft core, preferably lukewarm-cool. We recommend storing them at room temperature to preserve as much of the flavor as possible.

Made with care and love, we obviously keep our house recipe, which delights your taste buds, intact and secret. It’s all about the religiously reproduced process, and the freshness of the raw ingredients selected with dedication and commitment. Baillardran’s canelés are preservative-free and contain flour, eggs, milk, sugar, vanilla, and rum. This explains their short shelf life, and why you won’t be able to resist them.

We support the local economy wherever possible, with fresh ingredients sourced from local producers. The flour, for example, comes from a mill in Charente. The vanilla used exclusively in the alcohol-free Pure Vanilla canelé is organic, from Madagascar

We wouldn’t think of throwing away our creations, so we give them all a second chance. Canelés that are not sold are repurposed into gourmet canelés, hollowed out and filled with ganache, or redistributed at second-hand shops to benefit hospitals and other charities.

We create gourmet recipes such as Parisian macarons with buttercream and almond shells, and Bordeaux macarons made with almonds, vanilla beans, acacia honey, and egg whites. Last but not least, we have nougatine, caramel, and praline creations for special occasions.
